When I moved to the UK I looooved Full English Breakfast. I was eating meat and eggs then, and would devour the traditional bacon-sausage-fried egg-and-beans combo.
Now I still love the idea of a good ol’ fry-up, but my stomach detests greasy meats and things.
So my version of a healthy and yummy veggie vegan English Breakfast is baked beans, steamed spinach, mushroom fried in good oil, and some slices of wheat baguette. mmm!
